Re: coddled eggs. Mum had one of those pans when I was young. Good things come to those who add a little cheese, tabasco, black pepper (and maybe even a smidgen of curry powder) into each little dish with the eggs, before cooking. Also add above extras into a bowl, beat eggs just enough to mix white and yolk, then add mixture to the coddler. Think that'll make Devilled eggs
